what programs do people use for these?
I use Ableton Live and/with Reason. This team will give you sufficient sequencing abilities while having awesome sounds to play around with.

A free audio editor is Audacity. It's good for a free sound editor and it can multi-track, though awkwardly.

I used FlexiMusic Audio Editor for editing an audio, it is a team which develops fantastic, inimitable, low price and high quality software.
